Kürbis-Ricotta-Ravioli mit Spinat

 

Zutaten für 4 Personen

  • 3   Zwiebeln 
  • 800 Hokkaidokürbis 
  • 2 EL  Olivenöl 
  •     Salz, Pfeffer 
  • 70 Haselnusskerne 
  • 60 Parmesan (Stück) 
  • 150 junger Blattspinat 
  • 100 Ricotta 
  • 1 Packung (500 g)  Nudelteig 
  • 1   Ei , 2–3 EL Butter (Gr. M) 
  • 1 EL  flüssiger Honig 
  • 2 EL  Apfelessig
